ZUCCHINI ROLLS WITH RAW HAM AND STRACCHINO

It is a nice (to see) and very good (to taste) appetizer. I got to try it during my sister-in-law’s 40th birthday dinner. I got the recipe from the cook sent by the catering company who took care of the dinner. Accompany this appetizer with an excellent Prosecco di Valdobbiadene.

INGREDIANTS

  • 2 zucchini
  • 100 gr stracchino
  • 50 gr raw ham in a single slice
  • 10 chives stems
  • salt
  • pepper

INSTRUCTIONS

  1. Peel the courgettes, cut them into slices about 2 – 3 millimeters thick lengthwise, salt them lightly and place them on an inclined surface for 15 – 20 minutes so that they lose excess water.
  2. Grill the courgettes for 2 – 3 minutes on each side, on a very hot cast iron plate or on a grill pan.
  3. In a bowl, mix the stracchino, the chopped raw ham in a mixer, the chopped chives and pepper. Let the resulting cream rest in a cool place for at least 15 minutes.
  4. Arrange the grilled and now cold zucchini on the work surface and spread the stracchino and prosciutto cream on each slice and along its entire length with the help of a teaspoon or a round-tipped knife.
  5. Roll each slice of courgette on itself, as if to form a snail.
  6. Arrange the courgette rolls on a serving dish, garnish them with chives, and serve them very cold.
