World’s 50 Best 2018: the best female chef is Clare Smyth

Second World’s 50 Best Restaurants and Elit Vodka, Clare Smyth of London’s Core restaurant is the best female chef of 2018.

The elit® Vodka award for the 2018 World Best Female Chef is from Clare Smyth , a traditional and boring Irish-born cook, as she describes herself. Transplanted at the age of 16 from Northern Ireland to England to pursue a career in cooking, Smyth spent 15 years in 3-star Michelin restaurants, working under some of the best chefs in the world. Fatigue that culminated last year with the opening of her debut restaurant, the Core , where she is now recognized as one of the best cooks in the world.

13-year past as a pupil of Gordon Ramsay , of whom she was right-hand man and then managed her place, in 2008 she became the first and only female chef in the UK to run a 3 Michelin star restaurant. Since then she has come out of Ramsay’s shadow, developing her cuisine with a French background combined with her passion for English products in her restaurant in Notting Hill: this is how one of her best-known dishes, Potatoes and Eggs , a signature dish, is born inspired by his County Antrim childhood, where he uses dulse, seaweed, fermented potatoes, then trout and herring roe.


Her comforting food is one of the keys to Core, where she welcomes all her customers making them feel welcome and included. The menu is simple and structured, with ingredients known to all and which can be seen directly in the kitchen, in progress,core food is comfort food, simple and structuredmeeting the hands of those who cooked them during their meal. In addition to creating a barrier-free kitchen, Smyth strongly believes in the formation of diners and teams, as well as believes in food sustainability and in reducing the consumption of meat and fish to protect the planet. And she also believes in the recruitment of sustainable staff, to be trained following the rigorous work ethic that she herself has learned in her career as a chef. The title will be presented to her during The World’s 50 Best Restaurants 2018 ceremony, which will take place on June 19th in Bilbao , Spain.
