Kale and Egg Quiche with Sweet Potato Crust
The total time required for this recipe is 1 hour; including 30 minutes for preparation and 30 minutes for cooking of all ingredients.
This recipe yields 9 servings of quiche.
The list of ingredients along with measured quantities are given below:
- 2 medium to large sweet potatoes
- Half of a sweet onion
- 6 stalks of Lacinato kale
- 2 cloves of garlic
- 2 extra-large eggs and 2 extra-large eggs whites
- 1 T miso (optional)
- 75 c shredded mozzarella
- A big spoonful of goat cheese
- Kosher salt and freshly-grounded pepper
Method of preparation:
Step by step instructions for preparation of quiche are given below:
- Preheat oven at 400C0.
- Wash sweet potatoes, peel it and using a food processor’s slicing disk for making thin slices.
- Using a glass pie dish for layering the sweet potatoes in a circular pattern. Overlapping the sweet potatoes in such a pattern so that during baking, if the shrink they should remain in this pattern.

- 500 g Orange Sweet potato
- Organic Dijon mustard
- 8 cup coconut flour

- 2Tbsp Chopped Trinity seasoning (onion, bell pepper, and celery combination)
- 2 tsp Italian seasoning
- 2 large eggs
- Sea salt and pepper, to taste
- 1 Ib pork sausage or chorizo

- So, first of all, preheat the oven to 350 F0. Then, take a safe microwave bowl with ½ inch of water and cover the bowl with a paper towel or use a lid. Place this bowl in the microwave for 6-8 minutes on high heat until they become tender. Then remove from oven and let cool, then peel and dice sweet potatoes.
- When sweet potatoes are cooking, take a large skillet for cooking the sausage. When half cooking is done then add chopped seasoning, mustard, and Italian seasoning cook until sausage color turned brown. Drain it on paper towels.
- Then, take a bowl and mash sweet potatoes in it. Add remaining seasoning in it and mix well then add eggs at last in the bowl so that the eggs don’t cook with hot sausage. mix well all ingredients
- Then, take a scoop 2 tsp and make rolls into balls. So, now take a parchment-lined baking sheet and place the balls over it. Then bake these balls for 30-35 minutes or until browned and cooked throughout.
