INGREDIANTS

  • celery
  • Belgian endive
  • spring onion
  • carrot
  • parsley
  • pitted olives in brine
  • gorgonzola with mascarpone
  • milk
  • salt to taste
  • saffron

INSTRUCTIONS

  1. Finely chop tender celery stalks, spring onion (optional), carrot, parsley, olives, with Gorgonzola
  2. Using a little milk, form a cream, incorporate the vegetables and a pinch of saffron, season with salt, peel and wash the Belgian endive well.
  3. Fill the best leaves with the mixture, keep in the fridge for a few hours before serving
