SUPPLÌ WITH PEPPERS AND CAPERS

They served them to me a few days ago at dinner at a friend’s house as an appetizer. They are delicious and quite simple to prepare. The doses are for 10-12 supplì. So for 6 people, considering 2 each.

INGREDIANTS

  • 650 rice
  • red pepper
  • whole eggs
  • yolk
  • 200 g diced Ragusan provola
  • grated Parmesan cheese
  • tablespoon capers
  • bread crumbs
  • Flour
  • salt
  • pepper
  • olive oil

INSTRUCTIONS

  1. Cook the rice leaving it slightly al dente. Drain it and spread it on a pastry board.
  2. Cut the pepper into very small cubes. Do the same with the provolone.
  3. When the rice has cooled, mix it with the eggs and the yolk, the Parmesan cheese, the diced provolone, a tablespoon of oil, the small pieces of pepper and the desalted and chopped capers.
  4. Salt and pepper according to your taste.
  5. Let the mixture rest until it cools down
  6. When well compacted, form the supplì and pass them in the flour, then in the egg white and finally in the breadcrumbs.
  7. Fry the supplì in abundant oil and let them dry on absorbent paper
  8. Serve them hot, perhaps accompanying them with a good glass of Prosecco.
