This is an ancient dish typical of the upper Montefeltro with the unmistakable flavor given by the schooner, a product similar to pancetta in appearance but very different in taste.


  • slices schooner
  • bunch of fresh garlic
  • 4 – 5 tablespoons of wine vinegar
  • extra virgin olive oil


  1. Heat 3 tablespoons of oil in an iron pan.
  2. When it is hot, put the slices of schooner and cook them for a few minutes, turning them over once.
  3. Add the finely chopped fresh garlic and deglaze with the vinegar.
  4. Cook for a few more minutes.
