SOUR FENNEL SALAD

Pleasant as an appetizer or side dish with white meats.

INGREDIANTS

  • 2 fennel
  • 1 fresh spring onion
  • lemon
  • extra virgin olive oil
  • salt
  • pepper

INSTRUCTIONS

  1. The fennel is washed and cut into wedges.
  2. They are boiled in water or, if you like, steamed.
  3. They are cut into cubes and put to macerate for 1/2 or more in the lemon juice.
  4. When serving, add the onion cut into thin slices, the quantity depends on personal tastes.
  5. It is seasoned again with salt and pepper and finally with oil.
  6. It is mixed and served.
