SIMPLE MUFFINS WITH YOGURT, EVEN STUFFED

 

INGREDIENTS FOR MUFFINS:

2 whole eggs at room temperature

100g of granulated sugar

vanilla or vanillin extract

60ml of seed oil (I sunflower)

1 jar of yogurt

50ml of milk

210g of flour 00

8g baking powder (half a sachet)

METHOD:

To make this simple and delicious sweet yogurt muffin, let’s start by placing 12 cups in the muffin holder.

In a large enough bowl, pour the 00 flour with the baking powder and a pinch of salt and mix everything together.

In another bowl, instead, beat the whole eggs with the sugar and the vanilla or vanillin, add the seed oil, milk, white yogurt and mix everything together.

Pour the liquids into the previously mixed solids and incorporate everything until a homogeneous and lump-free mixture is obtained.

Divide the mixture into 12 muffin cups, filling them for about 3/4 and not to the brim because they rise a lot during cooking and add Nutella or jam by spoonfuls if you prefer.

Bake the muffins in the static oven previously preheated to 180 ° for about 20-22 minutes. (do the toothpick test)

Once out of the oven and left to cool, place the muffins on a serving dish or backsplash and if you prefer, sprinkle them with icing sugar.

At this point your soft, genuine and delicious muffin made with the sweet muffin dough will be ready to be enjoyed.
