The Sicilian almond pastries , raise your hand if you don’t know them, are the trophy that anyone who visits Sicily for the first time, never misses the opportunity, on his return, to take home (so as not to have to bear the idea of ​​not to be able to taste them more). Seriously, the almond pastries are the popular biscuits typical of the Sicilian tradition based on almonds that make a fine show of themselves in practically any Sicilian pastry shop. Making them at home is very simple and requires only a few ingredients. You can use both almond flour and whole almonds indiscriminately, specially chopped at home to obtain a very fine consistency. The history of almond pastries is interesting, which originates fromat the end of 1100 and is located in the Palermitan convent of Martorana. Here is the original recipe to make them at home.

Preparation Sicilian almond pastries

  1. Grind the almonds into flour by blending them for a long time in a blender or food processor. Add the granulated sugar and grind further.
  2. Transfer to a bowl and add the egg whites and bitter almond essence. Stir with a spoon, then work with your hands on a surface sprinkled with powdered sugar.
  3. Create a loaf, roll it in icing sugar and cut it into pieces of about 3 cm. Roll them into balls and press the center of each to create a hollow.
  4. Decorate them to taste with candied cherries or whole almonds and bake in a hot oven at 200 ° C until golden brown (it will take about 10-12 minutes).

After this time, let the almond paste rest for at least a quarter of an hour, then transfer them to a tray.


Variant Sicilian almond pastries

An even faster variant to make is that of almond pastes with loaf. This is generally found in well-stocked supermarkets, even outside Sicily.
