SCALLOPS WITH MARJORAM AND CREAM OF LEEKS

INGREDIANTS

  • 12 scallops
  • sprigs marjoram
  • extra virgin olive oil
  • 200 gr leeks
  • 150 gr potatoes
  • salt
  • pepper
  • 100 dl white wine here
  • liter vegetable broth
  • 20 gr soy sauce
  • 30 gr rice flour
  • 12 rose petals

INSTRUCTIONS

  1. Clean the leeks then braise them with extra virgin olive oil, then blend with the wine, let it evaporate and add the peeled potatoes cut into very small cubes, cook with vegetable broth, adjust the flavor then blend in a mixer.
  2. Season the scallops with marjoram leaves and a few drops of soy sauce, then sear them in a pan with extra virgin olive oil, being careful not to overcook them.
  3. Prepare a batter with rice flour and water a pinch of salt and pepper and dip the sprigs of marjoram that serve as a garnish, fry them after a few minutes.
  4. On the base of the dish put the sauce of leeks then lay the scallops and garnish with the sprig of fried marjoram finally decorate with rose petals n ° 1 for scallops.
