SAVORY MINI DONUTS OR POTATO CRÀFENI

INGREDIANTS

  • Ingredients for the dough:
  • 500 gr potatoes
  • 1 egg
  • 1 egg yolk
  • 95 gr butter
  • 20 gr brewer’s yeast
  • pinch of salt
  • 200 gr flour
  • tablespoons of milk in which to dissolve the yeast
  • For the stuffing:
  • mozzarella cheese
  • baked ham

INSTRUCTIONS

  1. Boil the potatoes and mash them. Once cooled, prepare the dough with all the ingredients, first adding the eggs, butter and then the flour and salt, lastly the brewer’s yeast dissolved in milk.
  2. Prepare two sheets, not too thin and arrange the stuffing of chopped ham and mozzarella, in heaps spaced apart.
  3. Cover with the other sheet by pressing the edges around the filling well, cut into a round shape even with a glass with a diameter of about 4 cm.
  4. Make sure the edges are well sealed to prevent the filling from spilling out.
  5. Place on a tray, sprinkled with semolina, they tend to attack because they are a little damp.
  6. Let it rise for a couple of hours.
  7. Deep fry in oil.
  8. They can also be cooked in a static oven at 180 degrees, for about fifteen minutes.
