Avocado Butter Salmon Canapes are an easy cold appetizer to make – here’s the quick recipe.

  • Cheese (spreadable) 100 g
  • Parmesan 2 tbsp
  • Chives as required

The salmon canapes with avocado butter  is a cold starter easy to prepare, and not too caloric. Avocado is rich in nutrients and its texture is ideal for creating spreads to be combined with different ingredients: with salmon it is one of the most appreciated for the delicacy of the two products. In this recipe we have added spreadable cheese and grated cheese to the cream to add a tangy touch. To speed up the preparation you can use ready-made shortcrust pastry or puff pastry, but if you have time available you can make it at home following our recipe . To enrich your table you can prepare a mixture of canapes with cod and potato mousse or a simple cooked ham and ricotta.

Preparation Salmon canapes with avocado butter

  1. Start preparing the base of the canapes: roll out the shortcrust pastry and cut it out with a round pastry cutter not too large in diameter. Arrange the disks of dough inside the cups or silicone molds to form bowls. Prick the bottom with the tines of a fork and bake for about 15 minutes at 180 ° C, until golden.
  2. Meanwhile, prepare the avocado cream: cut the fruit in half, remove the stone and remove the pulp with a spoon. Put it in a bowl if it is ripe or in a mixer if it is firmer; add the spreadable cheese, grated Parmesan, a pinch of salt and a drizzle of extra virgin olive oil. Mix the ingredients well until you get a homogeneous cream.
  3. Cut the salmon into strips and start composing the canapes: fill the shortcrust pastry bowls with a spoonful of avocado cream, arrange the strips of salmon in the shape of a rose and complete with the chopped chives.

Serve cold.
