This recipe is part of the culinary tradition of the upper Caserta area, it was used as an appetizer together with raw ham and pecorino cheese.

INGREDIANTS

  • one green, one red and one yellow peppers
  • handful capers
  • clove garlic
  • to taste olives
  • to taste anchovies
  • to taste extra virgin olive oil
  • to taste vinegar
  • to taste salt

INSTRUCTIONS

  1. Wash the peppers and cut them into strips, blanch them in boiling water (for a short time otherwise they will peel), drain and season with all the ingredients.
  2. It is preferable to prepare this recipe the night before so the peppers become tastier!
