REINFORCEMENT SALAD (WITH PEPPERS)
This recipe is part of the culinary tradition of the upper Caserta area, it was used as an appetizer together with raw ham and pecorino cheese.
- 3 one green, one red and one yellow peppers
- 1 handful capers
- 1 clove garlic
- to taste olives
- to taste anchovies
- to taste extra virgin olive oil
- to taste vinegar
- to taste salt
- Wash the peppers and cut them into strips, blanch them in boiling water (for a short time otherwise they will peel), drain and season with all the ingredients.
- It is preferable to prepare this recipe the night before so the peppers become tastier!
