RED LENTIL PATÉ

INGREDIANTS

  • 1 large onion
  • cup red lentils
  • tablespoon cumin seeds
  • extra virgin olive oil
  • salt

INSTRUCTIONS

  1. Chop the onion, place it in a saucepan (earthenware or steel), sprinkle it with salt, cumin seeds and oil, and fry gently until it becomes transparent.
  2. Wash the lentils under running water, pour them over the onion, cover with water and cook for 35 ‘- 40’. Stir occasionally and add water if necessary. Season with salt at the end of cooking. It must be a creamy mixture (if not, prolong cooking).
  3. Serve with pita bread or crispy rosemary focaccia.
