PRAWNS ON HOT CHICKPEA PUREE

a very easy chef’s recipe

INGREDIANTS

  • 200 chickpeas
  • to taste Rosemary
  • 3 prawns
  • to taste tomato concentrate
  • clove garlic
  • to taste extra virgin olive oil
  • to taste salt and pepper

INSTRUCTIONS

  1. Soak the chickpeas for 12 hours, cook them in the same water adding the garlic and the rosamarino, add salt only after cooking.
  2. Blend them with an immersion blender. Heat the necessary oil in a saucepan together with a clove of garlic, place the drained chickpeas.
  3. Add, pepper and a little tomato concentrate and cook.
  4. Arrange the chickpea cream on individual saucers, put 3 shelled and boiled prawns on top, a little more pepper and a drizzle of raw oil.
