They are simple, tasty and satisfying croquettes.


  • 600 gr potatoes
  • 200 gr mozzarella or scamorza cheese
  • 2 egg
  • mortadella or ham or salami
  • Grated Parmigiano Reggiano
  • Flour
  • salt
  • pepper


  1. Buy potatoes that maintain a certain consistency, boil them in cold water and pass them through a potato masher.
  2. Put them in a large bowl and add 2 whole eggs, the mozzarella cut into cubes, a little salt and pepper, mortadella (or whatever you prefer) cut into small pieces and the Parmesan. You will need to have a not very soft mixture that you will put in the fridge for about 10 minutes.
  3. Wet your palms and, taking the mixture, a little at a time, shape the croquettes which can be round or cylindrical.
  4. Beat the other two eggs and place the flour and breadcrumbs in two different containers.
  5. Gently take the croquettes, lightly flour them, pass them in the beaten egg and then in the breadcrumbs.
  6. Fry in a good seed oil.
