POTATO AND ANCHOVY CROQUETTES

INGREDIANTS

  • 1 yellow flesh potato
  • 1 egg
  • 1/2 clove garlic
  • tablespoons corn flour
  • 15-20 anchovies in oil
  • extra virgin olive oil

INSTRUCTIONS

  1. Cook the peeled potato in cold water. Once ready, peel it, mash it and put it in a bowl.
  2. Meanwhile, prepare the anchovies, put them in a pan with 1/2 clove of garlic, taking care to remove it when the anchovies have congealed, so as to form a sauce.
  3. At this point you will add them to the potato and egg, taking care to form small croquettes, which you will then roll in the corn flour.
  4. At this point you can start frying the croquettes.
  5. NB if you manage to find the Storo flour you will feel what your croquettes will taste like …!
