For the crust:

  1. 3 cups of all-purpose flour, keep aside little more for the rolling purpose
  2. 4 tablespoons of sugar
  3. 1 tablespoon of salt
  4. 3 sticks of the unsalted butter that has been cut into small cubes
  5. 9 to 10 tablespoons of ice water

For the filling:

  1. 2 large eggs
  2. 10 large egg yolks
  3. 1 cup of the light brown sugar
  4. 1 cup of heavy cream
  5. 2/3 teaspoon of salt
  6. 2 sticks of unsalted butter that has been cut into small pieces
  7. And 2 teaspoons of vanilla extract
  8. 2 ½ cups of pecan nuts pieces

 

Directions for the procedure: 

 

For the crust:

1) Sift the flour, sugar, and salt together in a bowl of a food processor till they perfectly combine. Now add the butter into the flour mixture and pulse it until the smallest pieces are the size of the corn kernels in about 10 to 12 pulses.

2) Now, add about the 7 tablespoons of the iced water into the bowl of the food processor and pulse it until the dough is no longer dry for about 4 to 6 times. If the dough is still dry, add about two more spoons of ice water into the dough. The dough should be in such a form that when you give it the shape of a ball, it holds it.

3) Turn out the dough from the bowl onto the work surface and then give it the shape of the disk.

4) Then, Wrap the dough in the plastic cover and place it in the refrigerator. Leave it to chill for about one hour or up to 3 days. You can also freeze the dough for about one month but must defrost overnight before use.

5) Then, Heat the oven to about 325 degrees. Remove the dough from the refrigerator and soft it for about 5 minutes at room temperature.

6) Flour your work surface and roll the dough into a 12-inch circle that is 1/8 inch thick. Fold the dough into quarters and then transfer it to the 9 by 13-inch pie plate. So, Unfold the dough and fit it in the pie plate and trim all of the overhang edges. For about ¼ inches.

7) By using the thumb and your index finger, pinch the edges of the dough together.

8) Chill the dough while the filling is complete.

For the filling:

1) Whip the eggs and the egg yolks in a bowl and then put them on aside. Mix the cane syrup, sugar, cream and salt in a saucepan. Then add the butter into it and melt over medium heat.

2) When the butter starts melting, continue heating the mixture but not to the level of bubbling for about 1 minute.

3) Add and whisk the sugar mixture into the egg yolks at a time when the bottom of the bowl is just warm to touch. Then add the remaining sugar mixture and the vanilla and set aside.

4) Now remove the pie dough from the refrigerator and pour the filling mixture on its top after putting the pecan nuts on its crust. Bake it for about 30 to 40 minutes.

5) Remove from the oven and cool it for about 1 hour before serving.
