OCTOPUS SALAD FROM TALIA

Talia is a very nice Greek friend of mine who has a restaurant in Greece recommended by local guides.

INGREDIANTS

  • 2 – 3 medium octopuses
  • 2 large salad tomatoes
  • 2 red onions
  • parsley
  • vinegar
  • salt
  • extra virgin olive oil

INSTRUCTIONS

  1. Boil the water, add the octopuses, three times then put them to boil for about forty minutes. Leave them in the water.
  2. Slice the tomatoes and onion.
  3. Cut the octopus into small pieces, season with the tomatoes, red onion and chopped parsley.
  4. Add a little salt and pepper, a splash of vinegar and plenty of extra virgin olive oil. Garnish with fresh lettuce leaves.
