MINESTRINA IN FOREST ASPARAGUS BROTH

In spring it is easy to go around the marine pine forests to find wild asparagus. I tried this simple soup, which I liked and, when I made it for friends, it got me a lot of compliments. I present it to you as I prepared it.
INGREDIANTS
- 2 liters of defatted meat broth
- 1 bunch of wild asparagus
- egg pasta
- Grated Parmigiano Reggiano
INSTRUCTIONS
- Wash the asparagus by removing the hard (white) part. Cut the dark and tender part into pieces of about one centimeter.
- Put the broth in a saucepan and put it on the stove. When it boils, add the asparagus and boil covered for at least fifteen minutes.
- Add the pasta and cook it.
- Serve hot accompanied by grated Parmesan
