LOBSTER IN SARDINIAN SALAD

INGREDIANTS

  • kg lobster
  • glass Moscato di Sardegna
  • bay leaf
  • onion
  • parsley
  • 3 – 4 Sardinian spiny artichokes in acidulated solution
  • 4 peeled Sardinian oranges
  • 8 Sardinian cherry tomatoes
  • mushrooms in oil
  • tablespoons extra virgin olive oil
  • 1 lemon
  • sea salt
  • pepper

INSTRUCTIONS

  1. Boil the lobster in salted water with the bay leaf, onion, parsley and wine for 20 – 30 minutes and allow to cool.
  2. Remove the carapace and cut it into rings.
  3. Add 3 oranges cut into wedges, the slices of artichokes, the tomatoes cut into 4 and the mushrooms drained from the oil.
  4. Prepare an emulsion with the juice of 1/2 orange and 1/2 lemon, oil, salt and pepper.
  5. Season and serve.
