LOBSTER ALLA CAGLIARITANA OR ALIGUSTA A SA CASTEDDAJA

Simple lobster appetizer. This recipe originates from Cagliari.

INGREDIANTS

  • kg lobster
  • bay leaf
  • parsley
  • 1 – 2 celery stalks
  • 1 – 2 carrots
  • 1 red onion
  • 1 white onion
  • olives
  • tablespoons extra virgin olive oil
  • tablespoons white vinegar
  • whole sea salt
  • 1 lemon (juice and zest)
  • pepper

INSTRUCTIONS

  1. Rinse the lobster and put it to boil in a pot with water, bay leaf, 1 onion and parsley.
  2. Meanwhile, clean and slice the vegetables.
  3. When cooked, it will take about 20 – 30 minutes, remove the shell and cut the pulp into slices.
  4. Put it in a salad bowl, add the vegetables and season with an emulsion made with oil, vinegar, lemon, salt and pepper.
