  • Juice of 1 lime
  • 16 flour tortillas
  • 1 1/3 cup of the Monterey Jack, shredded
  • ½ cup of the cheddar cheese, shredded

For the topping

  • 2 cups of the grape tomatoes, diced
  • 2 avocados, diced
  • ½ cup of onion, finely chopped
  • ½ cup of the cilantro leaves

Directions for the procedure:

  1. So, first of all, preheat the oven up to 350.
  2. Then, heat the oil in a skillet (medium heat). Then add the onions and saute them for about 6 minutes or until their softening.
  3. So, now, stir the frying onions in the garlic and saute it for an additional minute. Then put the corn, zucchinis, salt chili powder, and cumin into it.
  4. Cook the whole mixture with occasional stirring until the corns are browned and the zucchinis become tender.
  5. After that, add the black beans, enchilada sauce, and lime juice and then cook the mixture more for 2 minutes.
  6. Then, now with the help of a spoon, fill the tortillas with the vegetable mixture and roll them. Then place the all tortillas in the baking dish and top then with the cheeses.
  7. Bake the tortillas until the cheese melts for about 15 to 18 minutes.
  8. Then garnish the baked tortillas with the avocado, tomatoes, cilantro, and onion. Serve these tortillas warm.
