- 1 kg of fresh anchovies
- peanut oil
- Clean the anchovies by removing the entrails but keeping the head and tail.
- Rinse them, dry them well and pass them in the flour.
- Fry the anchovies in abundant boiling oil until golden.
- Drain them on absorbent paper, salt them and serve immediately.
