EGG TAGLIATELLE WITH CALABRIAN RED WINE AND SAUTÉED VEGETABLE STIK

INGREDIANTS

  • For the noodles
  • 350 gr flour
  • 2 whole eggs
  • 1 yolk
  • red wine
  • pinch of salt
  • For the sauce
  • 1 tomato
  • 1 pepper
  • 1 potato
  • 1 carrot
  • celery stalk
  • 1/2 glass of cognac
  • salt
  • pepper
  • extra virgin olive oil

INSTRUCTIONS

  1. Place the flour in a heap, add the eggs, add the wine a little at a time, a pinch of salt and begin to knead everything.
  2. Form a smooth and homogeneous dough and let it rest.
  3. Meanwhile, prepare the vegetables for the sauce. Cut the vegetables into strips and the tomato into cubes and put them in a pan with a drizzle of extra virgin olive oil and let them brown for a few minutes.
  4. Add the cognac and cook.
  5. Take the dough and with the help of a rolling pin roll out the dough to a thickness of 2 millimeters.
  6. Roll up the dough and cut it to a width of 5 millimeters. Unroll the dough with the help of the flour.
  7. Cook the noodles in salted water. As soon as they rise to the surface, drain and toss with the previously prepared sauce.
  8. Arrange on a serving plate and serve.
