CUTTLEFISH WITH BASIL

It is a very light appetizer.

INGREDIANTS

  • for the cuttlefish
  • 4 medium cuttlefish
  • 1 yellow onion
  • 1 carrot
  • coarse salt
  • pepper
  • tablespoons white vinegar
  • for the sauce
  • extra virgin olive oil
  • lemon juice
  • bunch of basil
  • sprig parsley

INSTRUCTIONS

  1. Boil the cuttlefish for 15/20 min. with vegetables, vinegar and pepper.
  2. Once drained, cut them into thin strips, almost julienne and let them cool.
  3. Emulsify the oil and lemon using a whisk or two forks, add the chopped basil (with your hands, but as small as you can) and the chopped parsley.
  4. Season the cuttlefish and let them rest for a while before serving.
