COLD MELON SOUP
A fresh simple recipe for warm summer evenings, if we want a reinterpretation of the more classic Prosciutto and Melon…. but to drink! I put it among the appetizers, but it can be a very good single dish.
- 3 melons
- 2 lemons
- to taste fresh mint
- 250 gr salted ham
- 3 slices of stale bread
- 1 glass of wine
- Cut the ham into julienne strips and dry them in the oven at 100 ° C, so that they become crunchy.
- Clean the melons from the peel and seeds, preferably use smooth melons, they have a taste that contrasts more with the meat, blend them with salt and pepper, lemon juice and bread soaked in white wine.
- Let it cool well and then pour it into bowls, garnish with crispy ham and croutons if you want.
