A fresh simple recipe for warm summer evenings, if we want a reinterpretation of the more classic Prosciutto and Melon…. but to drink! I put it among the appetizers, but it can be a very good single dish.


  • 3 melons
  • 2 lemons
  • to taste fresh mint
  • 250 gr salted ham
  • slices of stale bread
  • glass of wine
  • salt
  • pepper


  1. Cut the ham into julienne strips and dry them in the oven at 100 ° C, so that they become crunchy.
  2. Clean the melons from the peel and seeds, preferably use smooth melons, they have a taste that contrasts more with the meat, blend them with salt and pepper, lemon juice and bread soaked in white wine.
  3. Let it cool well and then pour it into bowls, garnish with crispy ham and croutons if you want.
