Chickpea hummus is a typical recipe of Lebanese and Middle Eastern cuisine, and consists of a sort of chickpea-based cream. Simple to prepare and very good, you can eat it directly with a spoon, or spread it on a toast of Tuscan bread. It is good to specify that the real chickpea hummus is prepared with tahini, that is a sesame seed paste that gives it a characteristic flavor: here instead I propose it without this ingredient, for an even faster and easier recipe!


  • 400 g boiled chickpeas
  • 1 lemon juice only
  • 80 ml extra virgin olive oil
  • salt
  • chili
  • Tuscan bread


  1. Blend the chickpeas with a little cooking water, oil, lemon juice, salt and chilli until you get a thick and homogeneous cream.
  2. Spread on toast and serve.
