They are an excellent appetizer to accompany a good prosecco. I tried them with Emmenthal, but any cheese can be fine. Take care to prepare a few more because they will be snapped up.


  • 100 gr flour
  • 100 gr grated emmenthal
  • 1 egg
  • 70 gr butter
  • 120 gr cooked ham
  • packs of Philadelphia type spreadable cheese
  • tsp dry chives powder


  1. Mix all the ingredients with an electric mixer and then finish by hand adding flour until the dough is manageable.
  2. At this point, form the mixture into a salami that will be cut into thin slices to be pressed with your fingers giving it the shape of small flowers.
  3. Place the biscuits on the parchment paper and bake at 190 ° for 10 – 12 minutes.
  4. In the meantime, prepare the filling for the biscuits by blending the ham and cheese to obtain a pink colored mixture.
  5. Do the same with the other package of cheese, incorporating the chives and obtaining a creamy green colored mixture.
  6. Once the biscuits are taken out of the oven, let them cool and place them in a serving tray, then – with the help of a pastry bag – place a curl of cream in the center of each of them alternating that with ham and chives.
