Caramel truffles: a sin of gluttony


A delicious alternative to the classic chocolate truffles: try them in the caramel version, perfect for the holidays.

Ingredients for 6 people

  • Water 2 tbsp
  • Lemon juice 1 tsp
  • Cream 2/3 cups
  • Dark chocolate 250 g
  • Chocolate (for covering) 150 g

The truffles caramelthey are delicious sweets characterized by a strong caramel flavor. Slightly different than traditional truffles – which are usually made with chocolate and cream – these definitely have an edge. A point in their favor conferred, in fact, by the caramel aftertaste which, if we want, makes them sophisticated. And, for sure, suitable for Christmas parties. Excellent simply covered with a pour of melted dark chocolate which, once solidified, creates a pleasantly crunchy casing, they can also be rolled in chopped hazelnuts, in chopped caramel or even just in bitter cocoa powder. They are very easy to prepare but, as is the case with most truffles, they must be made well in advance as they need to solidify in the fridge. Here’s how to bring them to the table.

Preparation Caramel truffles

  1. Prepare the caramel. Combine the sugar, water and lemon juice in a small saucepan. Heat over medium heat and stir until the sugar has dissolved. Bring to a boil, then wait for the mixture to take on an amber color.
  2. Remove from the flame and, in the meantime, heat the cream in a separate saucepan. Transfer the coarsely chopped chocolate to a bowl. Put the caramel back on the heat and pour the hot cream over it.
  3. Stir on the stove until the caramel and cream are completely blended. Pour the caramel cream over the chopped chocolate and let it rest for a couple of minutes, then stir to make it melt completely.
  4. Cover the bowl with cling film and let it cool first to room temperature, then in the fridge for about 2 hours. Take small portions of dough with a teaspoon and create balls.

Melt the couverture chocolate and, once cold, dip the truffles in it. Transfer them to a tray and keep them in the fridge until ready to serve.

 

Variant Caramel truffles

A variant of these sweets are salted caramel truffles: a very simple alternative version since it consists in adding a pinch of salt to the caramel.
