Preparation Candied oranges in chocolate

  1. Start by washing the oranges very carefully, using a brush to remove all impurities from the peel.
  2. At this point, remove the ends and cut the rest of the orange into slices a few millimeters thick.
  3. Weigh the slices and calculate the same weight of both water and sugar.
  4. Take a saucepan, put the water and sugar together and bring to a boil.
  5. Let the syrup boil for about 3 minutes, then add the orange slices, lower the heat and cook for about an hour, until the syrup shrinks. Be careful not to burn them.
  6. Take the slices from the pan and arrange them spaced apart on a dripping pan covered with parchment paper.
  7. Now place the oranges in a hot oven at 150 ° C and let them dry for about 30 minutes. When they are translucent and crystallized they are ready. Remove them from the oven and let them cool.
  8. Meanwhile, melt the chocolate in a bain-marie.
  9. Dip each slice of caramelized orange half into the chocolate and then put it to cool on a surface with parchment paper until the chocolate is solid again.
