Butter is now made with water

Cornell University researchers have come up with a butter with very few calories and fat. The secret? The water.

It is definitely butter , but it contains very few calories , because it is made almost entirely of water . Cornell University created this new light variant of one of the most common products in the kitchen .a low-calorie butter with a high percentage of waterAmerican, who published the results of his experiment in the journal Acs Applied Materials & Interfaces. The new product counts on 25.2 calories per spoon (about 10 grams) of which 2.8 grams of fat. A good result against the approximately 100 kcal and 11 grams of fat of the traditional version. The secret? In 80% water contained. This light butter, in fact, was created thanks to a process that allows you to emulsify a large amount of liquid with tiny drops of vegetable oil and animal fat .

The procedure is nothing new – the emulsion is the basis of many recipes, most certainly mayonnaise – but this amount of water had never been reached until now. The result is excellent : a product that has the texture, creaminess and flavor of butter. But, winking at our waist, practically a quarter of the calories.
