BULGUR WITH CURRIED VEGETABLES

It is a recipe that I found a few weeks ago, reading an article on integration in a magazine edited by the Diocese of Noto.
Ingredients for 4 people.

INGREDIANTS

  • 200 boulgur
  • medium potatoes
  • zucchini
  • onion
  • red pepper
  • green pepper
  • carrots
  • handful of fresh beans
  • fresh hot pepper
  • tsp curry
  • clove garlic
  • to taste extra virgin olive oil
  • to taste salt

INSTRUCTIONS

  1. Peel and dice the potatoes, slice the onion and cut the courgettes into cubes, the carrots into slices and the peppers into chunks, boil the beans.
  2. Chop the garlic and chilli and brown them in four tablespoons of oil.
  3. Before the garlic is too brown, add the curry and immediately after the vegetables
  4. Sauté over high heat, add salt and add a little water.
  5. Continue cooking until the vegetables are tender
  6. While the vegetables are cooking, swell the boulgur in boiling salted water, add a drizzle of oil and shell it with a fork.
  7. Add the boulgur to the vegetables and serve in individual bowls.
