BISCUIT DOUGH FILLED SWEET APPLE SACCOTTINO
INGREDIENTS FOR THE SHORT PASTRY:
260g of flour 00
60g of powdered sugar
3g of baking powder
130g of butter in pieces
grated zest of one lemon
1 whole egg
FOR THE STUFFING:
To make this simple apple-filled biscuit dough, let’s start by preparing the shortcrust pastry base.
In a bowl, mix the 00 flour with the icing sugar and baking powder, add the butter and start kneading.
Once you have a sandy mixture, add the egg, the lemon zest and mix everything until you get a stick of shortcrust pastry.
Wrap the shortcrust pastry with foil paper and let it rest in the fridge for about an hour.
Once rested, roll out the pastry on a floured surface, obtaining a thickness of about half a centimeter.
With the help of a rectangular dough cutter, cut into rectangles of shortcrust pastry, add a slice of apple and roll it up on itself twice creating a saccottino and pass the biscuits in the sugar mixed with cinnamon.
Place the biscuits obtained on a baking sheet lined with parchment paper and bake at 180 ° in a static oven for about 12-15 minutes.
Once cooked and allowed to cool, arrange the cookies on a serving dish and sprinkle with icing sugar if you prefer.
