Particular and original, these arancine made of wheat appeal to children and adults who can accompany them with a good glass of wine for a different and tasty aperitif. To prepare them, just follow the directions in the recipe, a bit long but delicious as few.


  • For the arancine
  • wheat glasses
  • 70 butter
  • 3 minced sausages (or 50 g of cooked ham and 50 g mortadella minced together)
  • tablespoons flour
  • glass of milk
  • 50 g grated Parmesan cheese
  • salt
  • For the batter
  • tablespoons flour
  • water
  • bread crumbs
  • frying oil


  1. Boil the wheat in water and salt.
  2. Once cooked, drain the wheat well and add the butter. Mix and return to the pot with 3 tablespoons of flour and a glass of milk. Cook over low heat and let everything dry well.
  3. Remove the pan from the heat, add the chopped sausages, the grated Parmigiano Reggiano and mix again. Make it cool.
  4. Prepare the batter in a bowl: put the flour, water and a pinch of salt and knead. It must not be neither soda nor too liquid. Let it sit for 30 minutes.
  5. Take back the seasoned wheat and make small balls with them not too large, pass them in the batter and breadcrumbs and fry them in abundant oil until golden brown.
  6. Dry them on kitchen paper and serve.
