Almond milk is one of the most popular Sicilian products and is prepared starting from the traditional dough: here’s how to do it.

“Nothing is created, nothing is destroyed, everything is transformed” : who knows if Lavoisier – a scientist of the 18th century – has ever thought of applying this famous law of the field of modern chemistry to the kitchen. After all, it is still raw materials, manufacturing processes and types of cooking that transform textures, colors and flavors. In reality, it is not necessary to go towards daring and unconventional experiments, rather we retrace the Italian gastronomic tradition and go down to the South, in the warm and sunny Sicily . Here almond milk , the real and authentic one, is prepared starting from the dough : a mixture of water, almonds and sugar from which the housewives of the island obtained the classic almond-based drink.

Widespread especially in the areas of Catania, Syracuse and Messina , almond milk is the main alternative to the classic cow or soy milk, becoming the protagonist of thirst-quenching drinks such as granitas or typical sweets, including cassata and white food. As per tradition, almond milk obtained from the dough is a recipe that is anything but complex: just add the right amount of water and melt the preparation. But let’s take a step back: let’s see in detail how to prepare the dough and what precautions to take to make a perfect almond milk.

How to prepare the almond stick

Put 400 grams of almonds in a pot full of boiling water and let them soak until the water has cooled. At this point, drain the almonds, peel them and blend them. In a saucepan, melt 150 grams of granulated sugar, add the blended almonds and cook until you have obtained a homogeneous and creamy consistency. Spread the mixture on a damp cloth and let it cool. Now, work everything in order to give the classic shape of the dough and let it rest in the refrigerator for about 2 hours.

How to make almond milk

To get a liter of almond milk you will need 250 grams of almond paste and a liter of still water at room temperature. First, coarsely chop the dough, put it in a glass of a blender and add the water. Blend everything until the almond paste has completely melted, then filter through a very tightly woven sieve. Pour your almond milk into a container and let it rest in the refrigerator for at least a couple of hours before enjoying it. Remember to keep it for a maximum of 5 days in the highest part of the refrigerator.
