All the chefs of Vinòforum 2019

Vinòforum in Rome, from 14 to 23 June, is an event that brings together many of the best chefs in the capital and beyond: here are what they are this year.

In the over ten thousand square meters of Vinòforum 2019 – from 14 to 23 June at the Tor di Quinto Park in Rome – together with the labels, wineries, sector operators, the great chefs of the national and international scene certainly cannot be missing . Many reconfirmed appointments, again this year, in which the greatest chefs will get behind the stove to offer their experience.

The temporary restaurant

For ten days 30 restaurants , selected by the gastronomic journalist Luigi Cremona, will transfer their kitchens to Vinòforum, developing five main themes : the great starred masters, seafood cuisine, emerging chefs, female cuisine, the great Osterias. The chefs’ dishes, with prices between 5 and 12 euros, will be paired with champagnes from the biggest houses , including Dom Pérignon, Krug, Veuve Clicquot, Moët & Chandon, Ruinart. No reservation is required.

On 14 and 15 June there will be Heinz Beck de La Pergola , Marco Illi and Giordano Paniccia from Hosteria Amedeo, Giuseppe Misuriello from Locanda Severino, then Emanuele Paoloni from Aqualunae, Stefano Marzetti from Mirabelle, Angelo Troiani from Convivio Troiani , Viviana Marrocoli and Igles Corelli of Mercerie . On June 16 and 17 it will be the turn of Alberto Mereu of F’Orme , Andrea Pasqualucci of Moma, Iside De Cesare of La Parolina, Fabio Verrelli D’Amicoof Raw Material. Viviana Marrocoli and Igles Corelli from Mercerie are back again, then Giuseppe Di Iorio from Aroma. In the following two days there will be Alain Rosica from Belvedere, Roberto Rossi from Il Silene, Massimiliano Cotilli from Satricum, Stella Shi from Cu-Cina  and Lorenzo Iozzia from Casa Iozzia. On 20 and 21 June it’s up to Claudio Carfagna from La Galleria di Sopra, Andy Luotto , Leonardo Marongiu from Hub, Pasquale Palamaro from Indàco, Ciro Scamardella from Pipero. While on 22 and 23 June Gianluca D’Agostino closesof Veritas, Maurizio Bardotti of the restaurant in ’43, Paolo Cacciani of Ristorante Cacciani and Maria Luisa Zaia of the Oste of Bon’Ora.

The night dinner

Ten dinners, one table, 25 seats , for three courses combined with three different labels. Surprising menus , with dishes designed ad hoc to marry the labels of Italian and international wineries such as Altemasi, Cecchi, Banfi, Joseph Perrier, Bonaventura Maschio. Opening the dance on Friday 14 June will be the inspiration of Francesco Apreda , fresh from the new opening with his Idylio  (Rome); Saturday 15 Alba Esteve Ruiz ; on Sunday 16 Igles Corelli , from Mercerie (Rome) will be staged ; Monday 17th it will be the turn of the pure flavors of Alessandro Capponi , of Host (Fiumicino –RM); Tuesday 18 will be ready to amaze Roy Caceres, for some time at the helm of the starry Metamorphosis  (Rome); Wednesday 19 will be the turn of Oliver Glowig , from Barrique (Monte Porzio Catone – RM); Thursday 20 fantasy in command with Massimo Viglietti , star-studded member of Enoteca Achilli at the Parliament  (Rome); Friday 21 Andrea Viola , from Il San Giorgio  (Rome); Saturday 22 Federico Delmonte , from Acciuga (Rome); Sunday 23, closing entrusted to Antonio Ziantoni , of Zia Restaurant  (Rome).

Four-handed dinners

A restaurant where chefs and master pizza makers work together to create unique menus. 30 seats for dinner, sponsored by Ferrarelle, once again with a minimum of three courses paired with three labels. It starts on 14 at 21 with the chef Raffaele Galasso from Le Due Torri (Presenzano), together with the pizza chef Salvatore Grasso from Gorizia 1916 (Naples), who will combine the dishes with the labels of the Fattoria Pagano winery. Saturday 15 is the turn of the chef Elpidio Capasso of Rama Beach (Naples), together with the master pizza maker Petra Antolini of Casa Petra (Verona). The next day in the kitchen there will be Antonio Madonna from Aqua by Lexus (Rome) together with Enzo Coccia from La Notizia (Naples), who will combine the dishes with Cavit wines.

Scheduled for 17 Federico Ferrari from Mirepuà (Alessandria) together with the pizza chef Massimo Giovanni from Apogeo (Lucca), in combination with the Frescobaldi winery and with Laudemio extra virgin olive oil. On the 18th it is the turn of Giuseppe Milana from Umami  (Rome) with Luigi Cippitelli from Cippitelli (Naples) and the Vestini Campagnano winery. To continue on the 19th with chef Salvatore Avallone from Cetaria (Salerno) and the pizza chef Carmine Donzetti from Pizza e fritti (Naples). June 20 is the prerogative of Manuele Croce of Osteria Siciliana (Rome) together with Pier Daniele Seu of Seu Illuminati (Rome), who will accompany their creations with the Fabbrica Pienza labels. On 21 June it is the turn of Andrea Molinari from Morsi e Rimorsi  (Caserta) and the pizza chef Matteo Aloe from Berberè  (Bologna), paired with Donnafugata. On 22 to 21 it is the turn of chef Danilo Maguro of Verace (Fiumicino) with Marco Quintili of I Quintili (Rome) and the Mossi 1558 winery. It closes on 23 with chef Fabrizio Sepe of Le Tre Zucche (Rome), together with Gianfranco Iervolino of 450 degrees (Naples).
